S'mores Cupcakes! - Tanya Bakes

Hey everyone, today I am going to be sharing with you the recipe for S'mores cupcakes from Tanya Bakes! I hope you enjoy this post, and I will see you all very, very soon. xxxx (Makes 12)


Ingredients:

A 12 hole muffin tin

For the biscuit base:

250g of Butter
125g of Unsalted Butter

For the cupcakes:

50g of Unsalted Butter
180g of Caster Sugar
1 Egg
Splash of Vanilla Extract
160g of Plain Flour
2 tsp. of Baking Powder
160ml of Milk
1 Big Bar (200g) of Cadbury's Dairy Milk

For the fudge icing:

250g of Salted Butter, Softened
275g of Icing Sugar
1 tsp. of Vanilla Extract
200g of Dark Chocolate (70% cocoa solids)

For the Marshmallow Icing:

150g of Mini White Marshmallows
4 tbsp. of Golden Syrup

To Decorate:

12 pieces of chunky milk chocolate


Preheat the oven to 180C/350F/GM4. Line the muffin tin with cupcake cases

Crumb the biscuits in a food processor or crush them with a rolling pin.

Melt 125g of butter, add it to the biscuits and mix thoroughly.

 Divide the digestive mix between the paper cases, then squash down firmly with you fingers so it lines the base of each case. Set aside until needed.

For the batter, cream together the butter and caster sugar until light and fluffy. Add the egg and vanilla extract, then fold in the flour and baking powder. Slowly add the milk and mix until smooth and fully combined.

Divide the mixture between the cases, then lightly press a square of chocolate into each. Bake for 20 minutes, until golden and risen. Transfer to a wire rack to cool.


For the fudge icing, combine the butter, icing sugar and vanilla extract until smooth.

Melt the chocolate in a bowl over a pan of simmering water, making sure the bottom of the bowl doesn't touch the water otherwise it'll burn. Stir the chocolate through the icing mixture. Pipe or spoon the icing onto the top of each cupcake.


For the marshmallow icing, melt the marshmallows and golden syrup in a pan over a medium heat and stir together.

Transfer to a piping bag and allow to cool a little before piping on top of the fudge icing.

Cool and set the piped marshmallow then flash under a very hot preheated grill for a minute,(but we used a blowtorch that we had) until golden brown. And a square of chocolate to the top of each!
